Paleo Banana Pancakes Recipe


Good Morning! It is Friday which means that the weekend is just around the corner. Today I’m sharing a simple breakfast recipe perfect for you to try during "quarantine mornings," Paleo Pancakes, made with cassava, coconut, and almond flour. If you are new to the term, Paleo is a lifestyle that avoids processed foods, gluten, added sugar and dairy.

It was my mother who made me try this Birch Benders Paleo mix because she knows my obsession with pancakes in the mornings. This mix is low in carbohydrates, high in protein, high in fiber, 'keto-friendly' and let's not forget easy to make.


¡Buenos días! Es viernes lo que significa que el fin de semana está a la vuelta de la esquina. Hoy te propongo una receta para que realices en estos días. Se trata de panqueques paleo, hecho con harina de yuca, coco y almendras. Paleo es un estilo de vida que te propone comer más saludable y evitar comidas procesadas, gluten, azúcar añadida y lácteos.

Mi madre fue quien me hizo probar esta mezcla Paleo de Birch Benders, porque conoce mi obsesión con los panqueques en las mañanas. Esta mezcla es baja en carbohidratos, alta en proteína, alta en fibra,‘keto-friendly’ y no olvidemos fácil de hacer.


I like to mash a banana and add it to the mix before cooking the pancakes in coconut oil. Also, I added my favorite Trader Joe's Pumpkin spice mix, which contains cinnamon, ginger, citrus, nutmeg, cloves, and cardamom. To finish and serve, fresh fruit and a little spread of almond butter to each pancake.


Me gusta majar un guineo y añadirlo a la mezcla antes de cocinar los panqueques en aceite de coco. También, añadí mi mezcla de especia favorito de Trader Joe's, es el Pumpkin Spice Mix, que contienen canela, jengibre, cítricos, nuez moscada, clavo y cardamomo. Para finalizar y servir, fruta fresca y un poco de mantequilla de almendra en cada uno de los panqueques.


Ingredients (for 5-7 pancakes)Ingredientes (para 5-7 panqueques):

2/3 of water de agua 
mashed banana guineo majado
Trader Joes’s Pumpkin Spice Mix to taste / al gusto

Optional / Opcional: 

* Depending on how the mixture looks, you may need to add more water / dependiendo de cómo se vea la mezcla, puede ser que necesites añadir más agua.
* If you want extra protein add an egg to the mix Si deseas extra proteína añade un huevo a la mezcla.
* Instead of using butter to cook the pancakes, use a healthier option like coconut oil En vez de usar mantequilla para cocinar tus panqueques utiliza una opcion más saludable como el aceite de coco.

  16. I could eat pancakes for breakfast everyday if I had too. This looks so good. I don't have cassava flour, but I do have coconut, and almond flour. Can I skip the cassava flour and just try it with the almond and coconut flour? Thank you for sharing the recipe.

    1. Yes, definitely. You will probably need to add baking powder in that case, since the mix that I used had all the dry ingredients already mixed, but you should be fine.
